APOC Founder &
I grew up in NZ. Meal times often involved lots of people, laughter and crazy stories. A hangi would be our "go to" for larger family events. Vegetables and meats cooked underground with that unique combination of smoky flavours and traditional steaming techniques. Through travel, work and friends, I have also come to learn more about the flavours and ingredients of many other cuisines. I have always enjoyed experimenting with cooking and baking, and still enjoy sharing my creations with others. I love the exchange of skills, stories and ideas that happen within the APOC team. We have many exciting plans brewing!
I think my mother was giving back some love to her daughter, which was me, through the cooking that she was doing. My mother put love and compassion in the process. She prays for the food to be beneficial for the people who eat it. This spiritual experience in cooking is very important for us. If you have in your life something cooked by someone in your family who puts love in the food — you feel something. There's a sensation, that can make the difference between something that has been cooked by someone who loves to cook and loves to put good energy into that food to make you happy. That's why I found my love for food and found that food was love.
I grew up in a small French island called Mauritius. The cuisine is a mixture of African, French, Indian and Chinese flavours. I always had a passion for food growing up as my mom is an amazing cook and owned two restaurants back then. I literally grew up in kitchens and learnt so much at a very young age. Since becoming a chef, I have worked in a lot of different cafés and restaurants in Melbourne. I am really enjoying sharing all these beautiful flavours that I have in my repertoire, with the beautiful people of Ballarat.
Barista / Cook
I was born in Colombia, a country naturally rich in tradition and passion. I was strongly influenced by my family who were always passionate about the community, full of positivity and good energy, and making things with love.
I have a Bachelor degree in advertising and am passionate about all forms of art.
Since I moved to Australia, around 7 years ago, I've been putting into practice my skills in painting, singing and now cooking. I also enjoy physical training like dancing, resistance and conditioning as well focusing on nutrition.
I delight in making a good cup of coffee and showing love through latte art, sharing with others, transmitting positivity, harmony and leaving my personal print on those who are around me.
I thank God and life for giving me the opportunity to work in hospitality, especially in the A POT OF COURAGE family. It has developed my knowledge and increased my skills in the kitchen by discovering new recipes, creating new dishes by mixing my traditional recipes with international cuisine and making healthy options for everyone to enjoy.

I want to create a big, amazing dream to change the world. After all, it’s said that there is nothing you can’t do if you put your mind to it.
